Spring Fever

So far in Lubbock's lovely, windy spring weather I've gotten sick twice in two weeks!  "I've never had allergies until we moved up here," has been a common line for me lately.  If anybody has any suggestions about how to fight off Lubbock allergies, PLEASE let me know!  If you've never seen LBK in the spring, here is a picture we took awhile back.  Notice the sky is brown and the construction signs are blown over!



On this flip side, MOM AND DAD ARE ON THEIR WAY RIGHT NOW TO LUBBOCK!  I am so very excited to see them for a whole weekend and not little snip its here and there!  Hopefully we remember to take pictures and I will post some.

Meal Planning now Sunday

Now that I'm "working" I have to start meal planning on Sunday!  Some of my new favorite websites to get recipes from are:


  1. youvegotsupper.com You've Got Supper has great ideas that you can go healthy or if you worked out that day, not so much!  They are easy and I've never made a dish from there we didn't like.
  2. skinnytaste.com  Even thought I don't do weight watchers, this blogger takes recipes you already know and turns them into low fat, low cal deliciousness!  If you want a healthy sub to something, this is the place to go!
  3. cookinglight anything  Of course Cooking Light is awesome and healthy.  My favorite is the quick and healthy section because it's not very many ingredients and it's a healthier option for dinner!  


This week we are trying to save money on our grocery's so here's the plan:

Monday: Spaghetti and garlic bread with a ceaser salad
Tuesday:  Dinner at a meeting
Wednesday: Taco Salad 
Thursday:  Chicken and Broccoli Stir-Fry with brown rice and edemame (youvegotsupper)
Friday:  Cheeseburgers, baked seasoned fries with a garlic aioli sauce, and fruit
Saturday:  Linguine with Garlicky Clams and Peas (cookinglight)

"I'm taking up blogging!"

After many people have asked my about our "blog" I have decided it's about time I start updating it!

Spring break this year was fast and furious!  It started off with Mrs. Townsend and Brian coming up to stay for a  few days!  We went shopping, got pedicures, read books, and ate lots!  Sean and I took them to Triple J's and Fuzzy's for dinner which are two of our favorite in LBK.  I got very used to Sean not studying as much, and now I'm sad it's back to the books!  It will be worth it in the end.  My friend Stephanie always has to remind me "Only two more years!"

Once we had said our good-byes on Thursday morning to them, I went and picked up Mollie from the Lubbock "laundry-mat, truck stop, and airport."  We had so much fun!  We laid out, we had margs, we watched basketball, we went on walks!  It was wonderful to have my wonderful friend here for awhile!  I love that it's still the same fun since we were little :)

Now it's the start of a new week and I'm looking forward to getting back out to Roosevelt to sub.  It has truly become a home away from home and I love working out there...even if it is only to sub!
